I’m Christy, The Girl Who Ate Everything. I’m a mom of four who has an obsession with food. I love music, dancing, and eating. I’m in heaven when all three happen at the same time. I’m earning my name, one bite ate a time.
1. Cut parchment paper into 15x10" rectangle and grease it with butter so the fudge does not stick.
2. Over low heat, melt peanut butter chips with 2/3 cup sweetened condensed milk. Cool slightly. With fingers, press evenly into thin layer to cover paper. Let stand at room temperature 15 minutes.
3. Over low heat, melt chocolate chips with remaining Eagle Brand. Remove from heat; stir in vanilla. Spread evenly over peanut butter layer. Let stand at room temperature 30 minutes.
4. Beginning at the wide side; roll up tightly jelly-roll fashion, without paper. Wrap roll tightly in plastic wrap. Chill 2 hours or until firm. Cut into ¼” slices to serve. I like to eat mine at room temperature.
