I’ve shared a few different variations of taco salads (like my favorite taco bowls), but today I wanted to share one of my families favorite QUICK dinners. We’re talking done in 5 minutes. Maybe 10 if the kids are helping. ;) Back to school nights can be crazy with after school activities and homework to finish. When the days are long, I’m often tempted to pick up fast food. Let’s be honest, some days I just give in… but yesterday I decided to run to the store real quick instead and grab a rotisserie chicken to make salads.
My kids love being in the kitchen with me and this was the perfect meal for them to help with. They placed everything in separate bowls and layered all the salads. They gobbled them right up too! Surprisingly my kids love salad.
To make this meal super quick and to add a little bit more substance I warmed up one of these Uncle Ben’s Ready Rice pouches. It was done in 90 seconds. I use these all the time when I forgot to place the rice in the cooker. They’re great!
You really don’t need a recipe for these taco salads because you can just add in your favorite fix in’s but I added a quick one for you just in case you need to reference. You could even put your ingredients inside a mini bag of chips to make walking tacos. My kids love those too and they are just as easy!

Total Time: 5 minutes
1 rotisserie chicken, shredded
Uncle Ben's Ready Rice
Tortilla strips or crushed tortilla strips
Other fix-in's you could add: avocado, pico de gallo, black beans, corn
In a small bowl layer the lettuce, chicken and rice. Then top with salsa, shredded cheese, tomatoes, sour cream and tortilla strips. Squeeze fresh lime juice over the top of your salad if desired.
