Classic pumpkin pie recipe -an all time favorite dessert for Thanksgiving!

I know I told you the razzleberry pie is my all time favorite pie, but this pumpkin pie comes in at a close second. I always have to get a piece of each. Followed by lots of whipped cream. Everything you’d want in a classic pumpkin pie recipe is right here. I’ve tried many different pumpkin pie recipes and always seem to come back to Libby’s famous pumpkin pie recipe. This pie is smooth and velvety with the perfect blend of spices.

The main difference I made in this recipe was reduced the evaporated milk to make the pie a little more firm and added in a little bit of vanilla. It gives it the perfect flavor. Mmm…so good!

Classic pumpkin pie recipe -an all time favorite dessert for Thanksgiving!

Pumpkin pie

Yield: One 9-inch pie

Prep Time: 15 minutes

Cook Time: 55 minutes

Total Time: 1 hour and 10 minutes

Ingredients:

2 eggs

1/2 teaspoon vanilla

3/4 cup sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/4 teaspoons ground cloves

1 (15 oz can) Libby's 100% pure pumpkin

1 1/4 cup evaporated milk

1 unbaked pie crust

Whip cream

 

Directions:

Pre-heat oven to 425°.

Beat eggs in a large bowl. Add vanilla and spices and mix until combined. Stir in pumpkin. Gradually stir in evaporated milk until the mixture is smooth.

Pour mixture into pie shell. Then place pie tin on a baking sheet and place in the oven to bake for 40-55 minutes or until the center is done. Place a knife in the center to make sure it comes out clean. Also, I usually cover the crust with foil the last 20 minutes of baking so it doesn't get too brown.

Serve immediately or refrigerate. Top with homemade whip cream. :)

Homemade razzleberry pie – one of my all time favorite pies! Filled with 3 different types of berries and topped with a lattice crust.

Each Thanksgiving the most requested pie at my house is definitely the razleberry pie. Usually my mom would pick one up and we always gobbled it right up. This year I decided to try and make my own and it turned out absolutely amazing.

Raspberries, blackberries and blueberries are piled into this delicious pie. Those are three of my favorite kinds of berries! I used this pie crust recipe as the base. If you’re short on a certain berry, you can even use strawberries or boysenberries too. They all taste amazing. Just use whatever you have on hand. :) Raspberries are definitely my favorite berry though.

Homemade berry pie recipe

Razzleberry pie

Yield: 8 slices

Prep Time: 30 minutes

Cook Time: 45-55 minutes

Total Time: 1 hour and 20 minutes

Ingredients:

2 pie crusts, unbaked

2 cups frozen raspberries

1 cup frozen blackberries

1/2 cup frozen blueberries

1 1/2 cups sugar

1/3 cup corn starch

1/2 teaspoon salt

1 egg white, whisked

1-2 Tablespoon sugar

 

 

 

Directions:

Combine mixed berries in a bowl and allow to thaw.

Pre-heat oven to 375°. Make crust according to pie crust directions and then press pie shell in pan. Tuck under the edges and then place foil over the crust and put pie beads or dry beans in the center of the foil. Bake for 12 minutes or until lightly golden brown.

Add the sugar, corn starch and salt to the berry mixture and stir together. Once pie crust is golden brown add the berry mixture on top. Then cut the lattice crust about 1/2 inch using a pizza cutter. Place 4 strips vertically on top of the berries and then carefully weave the 4 horizontal strips underneath. Brush the egg yolk on top of the crust using a pastry brush and then sprinkle with sugar.

Bake pie for 45-55 minutes or until crust is golden brown. Remove from oven and allow to cool and to thicken before slicing. Serve with fresh whip cream.

Easy pie crust recipe -perfect for beginners and turns out every time!

I really love a good flaky pie crust. This pie crust recipe has a great flaky pie crust that turns out a little crisp on the outside but soft in the center. It’s so yummy and perfect with just about any pie filling.

It’s also a lot easier than you think to make your own pie crust …especially if you have a food processor. It will cut the time (and stress) in half!

I love using both  butter and shortening in my pie crust. It makes it nice and flaky! There’s also all different kinds of edges you can make. They don’t have to be perfect! I just use my thumb and index finger to press the edge out.Easy pie crust recipe -perfect for beginners and turns out every time!

Before baking my pies I also like to pre-cook the crust a little. A little trick to not get the crust brown or bubbly is to place the foil over the crust and place pie beads (dried beans work great too) inside.

Easy pie crust recipe

Yield: 2 (10-inch) crusts

Prep Time: 20

Cook Time: Depending on pie recipe

Ingredients:

3 cups all-purpose flour

2 Tablespoons sugar

12 Tablespoons salted butter, cold

6 Tablespoons butter flavored shortening, cold

1 Tablespoon vinegar

Ice cold water (will use approx. 8-12 Tablespoons)

 

Directions:

Add the flour and sugar to a food processor and pulse a few times to get any air out of the flour. Cube the butter and shortening then add to the food processor immediately. Pulse 10-12 times until the mixture has turned crumbly. Add the vinegar and 1 Tablespoon of water. Pulse and then add another Tablespoon of water. Add a Tablespoon of water and then pulse until the dough begins to form a ball. It should have the consistency similar to play dough.

Cut the dough in half and then wrap it with plastic wrap and place in the refrigerator for about 30 minutes.

Once dough is chilled, roll out on a floured service and then carefully place in pie pan. Then make the crust edges using your thumb and index finger. You can also cut off the extra dough around the edges and press it down.

Place filling in and bake according to recipe.

If you don't have a food processor, you can use a pastry cutter as well.
