Delicious orange cream cupcakes

Over the weekend I did a little experimenting in the kitchen. I have a crush on orange soda (pun totally intended-ha)  so I decided to make orange creamsicle cupcakes. Boy did these surpass my expectations. Whenever I make up a recipe I have NO idea how it will turn out, but these orange cupcakes turned out absolutely delicious! Especially the frosting. Wow! I may have licked it straight from the bowl. Shh… don’t tell! I had to take them to my neighbors asap.

The jello pudding makes these cupcakes super soft and the orange soda gives them a sweet kick. These would be super fun for a summer or Halloween party!


Delicious orange cream cupcakes

Ingredients:

  • 1 16.5 oz white cake mix
  • 1 3.4 oz pkg instant vanilla pudding
  • 6 Tb orange jello powder save 1 TB for frosting
  • 3 egg whites
  • 1/3 cup vegetable oil
  • 1 cup orange soda room temperature
  • 1 8 oz cube of cream cheese softened
  • 1 cube (1/2 cup) salted butter softened
  • 1/2 tsp orange extract
  • 3 cup powdered sugar

Directions:

1. Pre heat oven to 350. Combine cake mix, vanilla pudding and 5 Tb of jello in a large bowl. Beat in egg whites, vegetable oil and orange soda. Mix on medium speed for 2 minutes.
2. Place batter in cupcake liners and bake for 15 minutes or until lightly browned. Remove the cupcakes from the pan and allow to cool.
3. For frosting combine cream cheese and butter in a large bowl. With a mixer beat until smooth. Add jello, orange extract and powdered sugar. Mix until fluffy.
4. Frost cupcakes and enjoy!


My little boy sure loved helping me make these cupcakes! He is the best taste tester. ;)

He even helped me frost the cupcakes… right after he gave himself a tattoo. He’s quite the artist, don’t you think? ;)

    These look so good; I will definitely have to try them! My husband isn’t much of a chocolate fan (crazy, I know), but loves all things creamsicle so this is one treat that might please the both of us.

    I made these today for my daughter’s birthday. I didn’t have the extract so used the soda instead. Worked out great and SO yummy. ( and I don’t like orange flavored stuff) Going to Sub Strawberry for the orange to take to a church potluck. DEFINITELY a keeper recipe.

    Wondering what I could replace the cream cheese with? My hubby HATES any type of cheese even when it hidden by cooking it…I made a promise when we married that I wouldn’t ever try to feed him cheese–I know what was I thinking!? lol….he misses out on some yummy things due to his cheese or lack of cheese fetish….any thoughts?

    my aunt made these the other day and i loved them , they were soooo good ( but i was the only one who liked them ) so she altered the recipe and used strawberry jello instead of orange and a tbsp of strawberry jam in place of orange extract and they were just as amazing but this time everyone liked them ( house full of strawberry fans ) they tasted like strawberry icecream ;)

      Hi Him! I think it will make enough. You may need to double the icing if you are putting an icing layer in between the cake as well! Hope you enjoy it! :)

      Hi Ana! I found this recipe for a homemade vanilla pudding mix! You could definitely try making this and adding it! I’ve also heard you can add a few spoonfuls of sour cream or yogurt, but I haven’t tried it! Hope that helps! :)

    You helped make a seven year old very happy at his class birthday party. He insisted. On orange with orange icing with rainbow sprinkles on top. We even added a candy orange slice in the middle. Thank you for the delicious recipe that had the whole family singing praises!

    I know this is an old post, but I came to it via Pinterest and feel compelled to comment :) I made these cupcakes – following both your cake and frosting recipes – and could NOT have been happier with them! Oh, my God, they’re so GOOD! Orange creamsicles are one of my most favorite things in the world, and these cupcakes more than do them justice. Seriously, they’re freakin’ fantastic. I can’t even.

    I’m no baking guru, but because your instructions here are clear and easy to follow, I whipped these up and beautifully presented them like a pro. Dude, I felt like Queen of the Kitchen.

    I stumbled upon this recipe after learning about adding soda to cake mix to make flavored cakes.  I am going to attempt to make a 2 layer heart shaped cake from this recipe this evening. My kids are going to go bonkers over it, I just know it!

    Made this as a 2 layer cake. Doubled the frosting to compensate. This was the best cake I have ever made!
