Cheesy Stuffed Garlic Bread

Everything is better with cheese, isn’t it?! If you’re a cheese lover like me, you’ll love this delicious bread, as well as my garlic french bread pizza, cheesy spaghetti boats, gouda mac and cheese and classic grilled cheese.

Given the choice between candy and bread, I’ll choose bread almost every time. And cover that bread with cheese and garlic and it wins hands down!

Whenever we make this pizza dough recipe, I’m the boring cheese girl. I love my cheese pizza! So when no one else wants cheese but me, I’ll make some cheesy bread for myself and let everyone else choose the pizza toppings. Give me some stuffed cheesy garlic bread and a yummy side salad and I’m a happy girl.

This stuffed garlic bread uses a combination of cheeses which includes cheddar, mozzarella and a parmesan/romano blend. It is pure cheesy goodness, inside and out. Not only is the bread topped with a nice layer of cheese, but there is also cheese sandwiched in between the layers of dough. Just pull apart the layers to reveal a lovely layer of gooey cheese! ;)

How to Make Cheesy Garlic Bread

The steps for making this recipe are pretty easy. You do need to work with yeast, but I promise if you use a thermometer to check the temperature of your water when proofing the yeast, that is the hardest part! The rest is a piece of cake, or rather a piece of stuffed cheesy garlic bread!

Step 1: Make the Dough

Mix the sugar and warm water together in a small bowl. Then add in the yeast and allow to proof, about 5 minutes. You’ll know it’s ready when the mixture begins to foam.

Add in olive oil and stir. Using a stand mixer with a bread hook attachment, add in flour and salt and mix until smooth and elastic.

Spray a large bowl with cooking spray, then place the dough in the bowl. Cover and let rise for about 1 1/2 hours.

Step 2: Prepare Oven and Make Cheese Mixture

Preheat the oven to 450°F. Place a baking stone or cookie sheet (turned upside down) in the oven while it’s preheating. Then mix together 1/2 cup mozzarella cheese with all of the other cheeses, garlic salt, garlic powder and parsley. Set remaining 1 cup mozzarella aside.

Step 3: Assemble the Cheesy Bread

Turn another cookie sheet upside down and cover with parchment paper. Then sprinkle cornmeal on top of parchment. Divide dough in half and press out into two 8-inch squares.

Using the remaining cup of mozzarella, sprinkle each dough square with 1/2 cup. Then fold dough over and seal closed, pressing with your fingers.

Slice the dough crosswise at one inch intervals, stopping just before the folded edge. Do not cut all the way through.

Sprinkle cheese garlic mixture evenly on top of each square (photo below). Then use the ends of the parchment to slide the dough from the cookie sheet onto the preheated stone/baking sheet (keep upside down).

Step 4: Bake in Oven

Bake the bread until the dough is cooked through and cheese is golden brown, about 12-14 minutes. Remove from oven and let cool slightly. Pull apart into breadsticks and enjoy!

Serving Tips

You can serve this garlic cheese bread as an appetizer and pair with a delicious dipping sauce such as marinara or ranch dressing. Or serve as a side dish alongside pizza, salad, soup, pasta and more.

Ingredients 

Dough:

  • 2 teaspoons granulated sugar
