I’ve been in a salad mood lately, and this one seemed to hit the spot! I loved everything about it! And it looked so pretty! *Almost* to good to eat!
Ingredients
- 1/3 cup almond slices or pecans
- 2 TB sugar
- Spring Mix Salad
- 2 kiwis
- 1 cup of strawberries
- 1/2 cup of raspberries
- 1/2 cup of celery
- 1 avocado
- 1 pear
- zest of orange or mandarin oranges
- Dressing:
- 2/3 cup olive oil
- 4 TB sugar
- zest and juice of 1 large orange
- zest and juice of 1 lime
Instructions
- Caramelize nuts by mixing with sugar in small skillet over low heat until sugar melts.
- Combine dressing ingredients in a jar and shake well.
- Toss salad ingredients together with nuts, add dressing to coat and serve.

YUM!! This salad was so good! It would be good with grilled chicken on top as well. Perfect for summer time! You must try this!

We’ve been in the pool almost every day since April! Today it was 97 degrees. Summer is going to be brutal! Thank goodness for air conditioning!

Oh my hubby is the same way! I rarely make salads like this unless were going to a party since I’m the only one who will eat it. lol. He just likes lettuce tomatoes and ranch!
