Hello there! I’m Katie, the creator and blogger at The Casual Craftlete and I am very excited to be here for this fun summer event. It has been scorching hot here in Southern Illinois, so to cool off I am sharing a recipe for Blueberry Mint Lemonade. This sweet and tart made from scratch recipe kicks up the flavor of the famous summertime lemonade.
Summer is great because the days are longer and we get to spend time outside if it’s not too hot. I believe my four year daughter would live outside if I’d let her. Some of my family’s favorite things about summer are cool refreshing drinks and fruit from the local farms. Blueberries are in season right now, so I thought I would marry the two and create a delicious blueberry mint lemonade recipe.
I love the flavor combination of blueberries and lemon. I think those berries and citrus go so well together. Last year I made an all natural lemon blueberry chia jam that was really good. So, this year I decided to make lemonade using freshly squeezed lemons and a blueberry mint simple syrup. Y’all, this lemonade recipe is to die for! It’s not too tangy, not too sweet, it is just right. I mean, how could you go wrong with such a beautiful drink?!
Enough of the talk…Let’s get to this blueberry mint lemonade recipe!
Ingredients:
For the blueberry mint simple syrup:
1/2 cup granulated sugar
1 cup water
1 cup blueberries, fresh or frozen, thawed
1 hand full of mint leaves
For the lemonade:
1 cup freshly squeezed lemon juice
5 cups sparkling water
blueberry mint simple syrup
Directions:
Start by making the blueberry mint simple syrup by combining the granulated sugar and water in a medium sauce pan over medium heat, stirring until sugar dissolves. Add the blueberries and mint leaves and bring to a boil, reduce heat and simmer until blueberries have broken down and release juices, approximately 3 to 4 minutes. Remove sauce pan from heat and let cool. Strain the blueberry mint simple syrup through a cheesecloth or fine sieve.
In a large pitcher, stir together freshly squeezed lemon juice, sparkling water and blueberry mint simple syrup. Place in the refrigerator to chill.
Serve over ice and garnish with blueberries, lemon slices and mint leaves, if desired. *I like to freeze blueberries, that way they stay cold longer.
