Chocolate Cookie Ice Cream Sandwiches from Creations by Kara for I Heart Naptime.
Hi fellow I Heart Naptime fans!! I’m Kara from Creations by Kara, and I’m thrilled to be filling in for Jamielyn while she’s off enjoying that darling little girl. There is nothing sweeter than snuggling a newborn, and I hope she’s doing plenty of that! (I’m jealous.)
Today I’m sharing a perfect summertime treat – Chocolate Cookie Ice Cream Sandwiches. We love ice cream at our house, especially during the summertime. It’s such a refreshing treat when it’s a hundred degrees outside. Of course the boxed ice cream sandwiches are good, but this homemade version takes it up a notch. The cookies are so rich and chocolaty. And don’t they just look pretty with the sugar crystals and chocolate chips on top?
I used vanilla ice cream, but you can use any flavor you like. I’m thinking cookies and cream or rocky road would be delicious!
This recipe makes 8 ice cream sandwiches, but you can easily double it. Just wrap them up in plastic wrap and store them in the freezer in a ziplock bag. When your kids need a frozen ice cream treat, just hand them one. No bowl washing required. :)

Chocolate Cookie Ice Cream Sandwiches
- 1/3 cup butter softened
- 1/3 cup brown sugar
- 1/3 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/4 cup cocoa
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup chocolate chips
- 1 pint vanilla ice cream
- Cream butter and sugars in a mixing bowl. Beat in egg and vanilla. Whisk together flour, cocoa, baking powder, soda, and salt; stir into creamed mixture till well combined.
- Scoop into tablespoon sized portions, then roll into balls. Place on lightly greased or silpat lined cookie sheets. Flatten with a glass dipped in sugar. Sprinkle with chocolate chips. Bake at 375° for about 8 minutes. Cool completely on wire racks.
- To assemble, place a scoop of ice cream (about 1/4 cup) on the bottom of a cookie. Top with another cookie and press together. Serve immediately or wrap in plastic wrap and freeze.
