Easter cupcakes w/ toasted coconut & eggs


Yesterday I made the cutest little Easter cupcakes and they were just too good not to share. Toasted coconut, cadbury eggs, polka dot baking cups… {swoon}.┬áThese Easter cupcakes are so simple and nothing new, but they are definitely a family fave. Growing up we would color the coconut green, but I think the toasted coconut tastes so much better! These would be perfect for an upcoming Spring event. They require little effort on your part, but will definitely oo and ahh your guests!

This recipe for Easter cupcakes is super simple, yet so good!



Easter cupcakes w/ toasted coconut & eggs


  • store bought cake mix, prepare with ingredients according to package
  • 1 cup coconut
  • 1 pkg cadbury eggs
  • 8 oz cream cheese, softened
  • 1/2 stick of butter, softened
  • 3 cups powdered sugar
  • 2 tsp vanilla


1. Prepare cake mix according to package. Place cake mix in cupcake holder and bake according to package directions.
2. In a large bowl, mix together cream cheese, butter, powdered sugar and vanilla.
3. Once cupcakes are cooled frost them with a butter knife.
4. To toast your coconut, spread evenly over a baking sheet, and bake at 375 for 5 minutes.
5. Top frosted cupcakes with coconut and Cadbury eggs. Enjoy!
