We are adjusting the amount of oil and eggs used in the cake mix so that they turn out perfectly gooey and decadent, just as a brownie with a cake mix should be. The striking pink color elevates them making them impressive and elegant. No one needs to know how easy this strawberry dessert is to make!

They’re perfect for wedding showers, baby showers, and garden parties but easy enough to whip up for pool parties and casual after-dinner desserts!

Cake Batter vs Brownie Batter

What exactly is the difference? The answer lies in the extra ingredients! Cake batter uses a leavening agent which helps it rise and become nice and fluffy. Brownies generally use much less. 

In this case, we are using a cake mix, but adding in more eggs and oil than the box mix calls for. This helps counteract the rise and makes it nice and fudgy. It’s not a classic brownie recipe but it looks and tastes like it is!

  • Strawberry cake mix: No particular brand, just whatever you can find in your local grocery store. 
  • Vegetable oil: The fat needed to create a moist, gooey consistency. 
  • Large eggs: Needed for structure but also added moisture for great texture. 

Sweet Strawberry Glaze

The strawberry glaze takes these strawberry cake mix brownies over the top. Below are the ingredients needed to make it.

  • Powdered sugar: The sweet sugary component that dissolves nicely into a smooth glaze.
  • Strawberry jam: No better way to showcase fresh strawberries than in a homemade strawberry jam (store bought works great too).
  • Heavy cream: The liquid component that when added to the powdered sugar takes it from a powder to a paste. Then to a glaze. 
  • Fine sea salt: Just a pinch to enhance all of the surrounding flavors and to balance the sweetness. 

How to Make Strawberry Brownies

Just a few easy steps to make the brownies, but when topped with a homemade strawberry glaze they become even more irresistible. It’s worth the extra couple of steps!

  • Mix strawberry cake mix. Combine the box of cake mix, oil, and eggs in a large bowl. Stir until combined. It will be a thicker mixture than an average cake batter. 
  • Bake brownies. Pour brownie batter into an 8×8 square baking pan lined with parchment paper and press it down with the palm of your hands. Bake in a preheated 350-degree oven for 18-20 minutes or until a toothpick comes out clean. Allow it to cool before adding the glaze.
  • Make the glaze. Whisk together the powdered sugar, jam, heavy cream, and salt until smooth. Add more cream or milk as needed to thin it out. 
  • Spread glaze on top. Once strawberry brownies have cooled, spread the frosting over top and slice into 16 bars. 

Recipe Tips

  • Prepared pan. Using parchment paper is great for providing a nonstick surface and easy removal of the strawberry brownies. If you don’t have any, be sure to use melted butter or a cooking spray instead.
  • Easy mixing. A hand mixer isn’t necessary but will speed up the mixing process as this will be a thick batter and harder to mix than a regular cake batter.
  • The glaze should be the consistency of glue. Not too thick and not too thin. 
  • Cool your strawberry brownies before adding the layer of frosting, otherwise, it will melt and become too runny.

Variations & Fun Add-Ins

  • White chocolate chips. Mix in 1/2 cup white chocolate chips for a little extra sweetness and texture. The sprinkling of white chocolate throughout looks fantastic!
  • Omit the glaze if preferred, they are terrific all on their own and a little less sweet that way.
  • A different cake mix. Use this recipe for any flavor of brownies you’d like. Just switch up the flavor of the cake mix to whatever you like. Chocolate brownies are always classic!
  • Freeze-dried strawberries. To give these brownies even more strawberry love, throw in some freeze-dried strawberries into the brownie mix. Avoid using fresh strawberries in the batter because the water content will throw off the consistency. Save them for garnish on top!

How do I know when my brownies are done?

If you’re following the instructions as listed, then you should be just fine keeping them in there for 18 – 20 minutes. Check at the 18-minute mark, using a toothpick. Insert it in the middle of the brownie dish and if it comes back out clean, it’s ready. If not, leave it for the remaining 2 minutes.

Do strawberry brownies need to be refrigerated?

They don’t! You can keep them at room temperature, as long as they are covered in an airtight container, for up to 3 days. If you want to stretch it out for a few more days, pop them into the fridge. 

Can I store these strawberry brownies in the freezer?

Please do! They’re a great dessert to have on hand last minute. Transfer your brownies to a freezer-friendly bag. Separate the layers with parchment paper so they don’t freeze in a clump. Thaw them in the fridge overnight or just leave them on the counter for a couple of hours.

  • 15.25 ounce box strawberry cake mix
  • cup vegetable oil
  • 2 large eggs

Strawberry Glaze

  • cup powdered sugar
  • 2 Tablespoons strawberry jam
  • 2 Tablespoons heavy cream , or milk
  • pinch fine sea salt

Instructions

  • Preheat oven to 350°F. Line a 8×8-inch pan with parchment paper and set aside.
  • Combine the cake mix, oil and eggs in a large bowl. Stir together until combined. It will be a thicker mixture.

  • Spread evenly on top of cooled brownies. Then slice into 16 bars.

Notes

Variation: You may also mix in a 1/2 cup white chocolate chips if you’d prefer. If you’d prefer them less sweet, feel free to omit the glaze.
Storage: Store in an airtight container for 3 days or freeze up to 3 months. Thaw overnight in the refrigerator before enjoying, or leave at room temperature.
