Brown the meat in fry pan over medium heat. Once cooked through, remove to a bowl.

Sauté

Cook peppers and onions in pan until tender. Then add in the cooked potatoes.

Transfer

Transfer the cooked meat, peppers and potatoes in the bottom of a baking pan.

Pour the whisked eggs over top of meat and potatoes in the pan.

Sprinkle chopped spinach and cheese on top. Cover and refrigerate until ready to bake.

Refrigerate

Then bake for 45 minutes. Remove foil and cook an additional 10-15 minutes.

Let stand a few minutes before serving and then slice.
