Melt

Place the peanut butter, honey and vanilla in a bowl and microwave for 20 seconds.

Stir

Stir in the oats, chia seeds and any other desired mix-in's until well combined.

Shape

Roll into balls, then press the balls flat slightly. Add any toppings if desired.

Place the cookies in the fridge or freezer until set.
