Gather all ingredients on counter to get started.

Cut the potatoes into smaller bite sized pieces.

Cook potatoes, sliced bacon, onions and bell peppers in skillet for 10 minutes until crispy.

Crack the eggs into the skillet. Cover and cook for 5-8 minutes over low heat, or until the eggs are set.

Sprinkle shredded cheese on top the last couple minutes of cooking.
