Easy Mexican lasagna with delicious layers of crispy tortillas, seasoned hamburger, beans, corn and melted cheese. The perfect weeknight dinner that's full of flavor!
Tortillas Bell Pepper Onion Corn Black Beans Rotel and Salsa Ground Beef Taco Seasoning Cream Cheese Shredded Cheese
In a large skillet over medium-high heat, brown hamburger. Add onions and peppers and cook 3 minutes. Remove any extra grease.
Add taco seasoning, then stir in Rotel, beans, corn, and salsa. Add cream cheese and melt. Stir until combined then remove from heat.
Layer 5 tortillas in the bottom of your baking dish. Sprinkle with cheese. Next layer half of the hamburger mixture. Repeat layer.
Top with remaining cheese and then bake at 350 degrees F for 25-30 minutes, or until bubbly hot. Top with desired toppings.
