Let's Get Started


Grilled or roasted corn Red bell pepper and red onion Fresh cilantro and Cotija cheese Sour cream and mayo Fresh lime, zest and juice Chili powder, salt and pepper Jalapeno

Prep corn


Place roasted corn in a large bowl. You can also use 5 ears grilled corn cut from the cob.

Add ingredients


To the bowl of corn add chopped bell pepper, red onion, cilantro and cotija cheese.

Make dressing


In a small bowl, whisk together sour cream, mayonnaise, zest from 1 lime, lime juice, cumin, and chili powder until smooth. Season with salt and pepper.

Stir to combine


Drizzle the dressing over the salad and gently stir until everything is coated and combined.

Garnish and serve


Top with cheese, cilantro, salt, and pepper, if desired. For heat, add some sliced or diced jalapeno and squeeze of lime.
