Make dough

Beat butter for 1 minute on medium, mix in 3/4 cup powdered sugar and beat until creamy. Stir in vanilla and mix in flour on low speed.

Add pecans

To the bowl of dough, mix in the chopped pecans until combined.

Scoop and bake

Scoop dough then roll it into 1-inch balls. Place on  a lined baking sheet and bake at 350°F for 13 to 15 minutes. Cool on pan for 5 minutes.

Powdered sugar

Roll cookies in powdered sugar, then place on rack to cool completely.

Cool

Once cooled, roll again or use a sifter to coat them in the remainder of the powdered sugar.
