Ingredients

Zucchini Yellow squash Extra virgin olive oil Minced garlic Italian seasoning Kosher salt and pepper

Prep zucchini

Slice the zucchini and squash into 1/2 inch slices. Place on baking sheet.

Place on baking sheet

Arrange cut slices on prepared baking sheet.

Combine seasoning

Stir together the olive oil, garlic and Italian seasoning. Then evenly pour over the zucchini and squash. Season with salt and pepper.

Roast

Bake in preheated oven for 25 minutes or until zucchini is tender. Add parmesan cheese and parsley if desired.

Serve

Serve while warm. Add fresh parsley if desired. Season to taste.

Seasoning Variations

– Red pepper flakes or chili powder – Lemon juice before serving – Breadcrumbs for a bit of a crispier coating. – Fresh herbs like dill, oregano, or basil.

Store 

Keep in an airtight container for up to 4 days in the fridge. Reheat in the oven at 400°F.
