This Asian chicken salad is everything you want in a salad recipe...fresh, light, crunchy and delicious. It's super flavorful and is loaded with all your favorite toppings!

Ingredients
6-8cupsromaine lettuce
2-3cupsclassic coleslaw mix, no dressing
2cupscooked chicken , I like to use rotisserie, chicken strips or grilled chicken
¼cupchopped green onions
¼cupsliced almonds
¼cupchopped cilantro
½cupwonton strips
¼cupvegetable oil , or canola oil
2Tablespoonsrice wine vinegar, or white wine vinegar
1-2Tablespoonsgranulated sugar
½teaspoonsesame oil
Salt, to taste
Ground black pepper, to taste
Instructions
In a large bowl, toss together the lettuce and coleslaw. Place the chicken, green onions, almonds, cilantro, and wonton strips on top.
In a small bowl, whisk together the oil, rice wine vinegar, sugar and sesame oil until the sugar is dissolved. Salt and pepper, to taste. Drizzle the dressing over the salad.
Toss to combine. Serve immediately.
Notes
Wonton strips: Try making these homemade wonton strips. They are taste delicious in this salad. Extra mix-in's: Mandarin oranges, red bell pepper, or shelled edamame would make a great addition. Try sprinkling sesame seeds over the top for added nuttiness. Substitutions: Feel free to swap almonds with peanuts or cashews. You can also use Chinese rice noodles instead of wonton strips if preferred. Sometimes I use teriyaki chicken to add even more flavor to this salad. Dressing: For a premade dressing, I like using Newman's Own Sesame Ginger. Servings: This salad will serve 4 if served as a main dish, or 6 to 8 if served as a side dish.
