Instructions
Cut the pineapple in half lengthwise (cut all the way through the stem, leaving it on). Then cut in half again.
Use a small pairing knife to make a slice across the top 1/2″ down from the core.
Use the knife to go around the sides and bottom. The whole pineapple should be able to come out from the skin.
Then make 1/2″ slices across.
Push one piece out one end and another piece out the other end. Add toothpicks if desired for easy serving.
Notes
Cutting into slices:
Cut the ends off, then vertically cut into 4 pieces.
Slice the core out at an angle on each piece.
Carefully slice the skin off.
Then slice into 1/2″ pieces. For smaller slices, cut in half again.
Freezing: Place sliced pineapple on baking sheet and flash freeze until hard, about 20-30 minutes. Then add to a freezer bag or container and freeze for up to 3 months.
