This chicken chow mein is both easy and delicious with stir-fried noodles, carrots, cabbage and tender chicken coated in a savory sauce! It's the perfect weeknight dinner.

1 large skillet or wok
Ingredients
1(12-ounce) packagestir fry rice noodles, chow mein noodles or angel hair pasta
½cupchicken brothor vegetable broth, plus more as needed
1-2Tablespoonsgranulated sugar
1Tablespooncornstarch
Chow Mein
2-3Tablespoonsolive oil, divided, plus more if needed
1pound boneless, skinless chicken breast, sliced into bite-sized strips
Kosher salt, to taste
Ground black pepper, to taste
2-3cupschopped green cabbage
2largecarrots, julienned
3garliccloves, minced
1cupbean sprouts, optional
For garnish: Sliced green onions
Instructions
Cook noodles al dente according to package instructions (about 4 minutes). Be careful not to overcook. Drain and rinse in cool water.
Chow Mein Sauce
In a small bowl, whisk the oyster sauce, soy sauce, sesame oil, broth, sugar, and cornstarch until the sugar is dissolved.
Chow Mein
In a large skillet or wok, heat 1 Tablespoon oil over medium heat. Add the chicken and season with salt and pepper. Cook until the edges are golden brown and the center is no longer pink. Transfer to a plate.
Add 1 Tablespoon, or more if needed, oil to the skillet. Stir in the cabbage and carrots. Cook 4 minutes and add garlic. Cook, stirring frequently, 1 to 2 minutes more.
Stir in the noodles and the sauce. Toss until combined. Stir in the cooked chicken.
Top with sliced green onions, if desired. Serve while hot.
Notes
Noodles: If you want to make a more authentic dish, purchase chow mein noodles from an Asian store. I prefer to use the stir fry rice noodles (which are gluten free). You can also use ramen noodles or even angel hair pasta. Vegetables: This is a great dish to add in more vegetables. You can double the cabbage and carrots if preferred. You can also add in bell peppers (cook a few minutes before adding in cabbage), bok choy and mushrooms. Spices: If you'd like to take the heat up a notch add in a splash of sriracha sauce and red pepper flakes.
