A soft, sweet and easy sugar cookie recipe that's perfect to share with loved ones. These Valentine's Day sugar cookies are rolled in sprinkles or sugar, much easier than classic cut-out cookies!
½cupsprinkles, sanding sugar or granulated sugar, for rolling
Instructions
In a large bowl, cream together the butter and cream cheese with an electric mixer. Add the sugar and mix an additional minute. Add in the egg, vanilla and almond extract and mix until combined.
Slowly add 2 1/2 cups flour and the baking powder. Add an additional 1/4 cup flour if the dough is too sticky. Mix, just until combined. Note: The dough will be a little sticky and refrigerating it will help. Cover the dough and chill for 1 hour. Place sprinkles (or granulated sugar) into a bowl if desired and set aside.
Preheat the oven to 350°F. Line two baking sheets with parchment paper. Using a medium cookie scoop or Tablespoon, spoon out the dough. Roll in between two hands and then roll into the sprinkles or sugar (whichever desired).
Place onto the pan 2 inches a part and press down with the bottom of a cup.
Bake for 10-12 minutes, or until the bottoms are lightly golden. Allow to cool on the pan for 2 minutes and then transfer to a cooling rack. Store in a airtight container.
Notes
You can roll the cookies in granulated sugar instead of sprinkles if preferred. You can even add a candy heart or Hershey kiss on top, too!
