Easy Corn Dog Muffins

- 3/4 cup buttermilk at room temperature
- 1/4 cup honey
- 2 large eggs at room temperature
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup granulated sugar
- 1 teaspoon table or fine sea salt
- 1/2 cup salted butter melted and cooled slightly
- 3 Hebrew National hot dogs cut into 1 1/2 inch pieces
Preheat the oven to 400°F. Spray a muffin pan generously with cooking spray. I prefer using a silicone baking pan. Set aside.
Whisk together buttermilk, honey, and eggs in a small bowl.
Stir together cornmeal, baking powder, flour, sugar, and salt in a large bowl. Add the milk mixture and stir just until combined. Finally, stir in the melted butter.
Pour batter into prepared muffin pan 2/3 the way full. Place the hot dog into the center of the muffin.
Bake for 13 to 15 minutes, or until golden brown. Test with a toothpick to make sure the center comes clean. Remove to a cooling rack.
