Individual Potato Salad Bites

  • 10 Small red potatoes
  • 1/2 cup Mayonnaise
  • 2 tsp Mustard
  • 1 tsp Dry Dill
  • 1/4 tsp Creole Seasoning Salt
  • 1/4 tsp Paprika


  • Boil small red potatoes in salted water until fork tender, remove from the water and let cool to room temp.
  • Slice in half and scoop out most of the potato with a spoon as you would if you were making twice baked potatoes.
  • Mash the potato that you scooped out along with mayo, mustard, dry dill, and creole seasoning salt to create a mashed potato like consistency, then fill the potato skins back up with the mashed potato salad.
  • Top with paprika and more dill.
