Ingredients
¼cupbutter, melted
1-2clovesgarlic, minced
¼cupall-purpose flour
2cupschicken stock, or vegetable stock
2cupshalf and half
½teaspoonKosher salt
¼teaspoonwhite pepper
⅛teaspoonnutmeg
1-2cupssteamed broccoli, cut into small pieces
¾cupshredded carrots, steamed
2-2 ½cupssharp cheddar cheese
Instructions
In a large pan, begin to melt the butter over medium-low heat. Add minced garlic and let cook for about a minute. Whisk in the flour and cook for a few minutes, just until golden brown.
Slowly add in chicken stock, half-and-half, kosher salt, white pepper and nutmeg. Stir together and let cook for about 5-10 minutes, stirring occasionally.
Add in the broccoli and carrots and let simmer for another 15-20 minutes.
Mix in the cheese and stir until just combined. Serve in bread bowls or with rolls.

How to Store and ReheatThis soup will keep in the refrigerator in an airtight container for about 3 to 4 days. You can reheat the soup in the microwave or on the stove top until it's warmed throughout.
