This homemade apple pie filling has tender diced apples cooked on the stovetop in a thick, glossy brown sugar and cinnamon sauce. Ready in 45 minutes for pies, crisps, pastries or toppings.
Ingredients
2Tablespoonsfresh lemon juice
5 ½ to 6cupsdiced apples(any variety, peeled if desired)
½cuplight brown sugar, packed
½cupgranulated sugar
¼cupcornstarch
1 ¼teaspoonsground cinnamon
¼teaspoonground nutmeg
¼teaspoonsalt
2cupswater
Instructions
Prep apples. In a large bowl, drizzle 2 Tablespoons lemon juice over 5 1/2 - 6 cups diced apples and toss to coat. Set the apples aside.
Combine sauce ingredients. In a large saucepan, stir together 1/2 cup brown sugar, 1/2 cup granulated sugar, 1/4 cup cornstarch, 1 1/4 teaspoons cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt. Whisk in the water until everything has dissolved.
Add apples. Bring the mixture to a boil over medium-high heat. Reduce the heat slightly and simmer for 2 minutes. Add the apples and increase the heat to medium-high to bring the mixture to a full boil again. Reduce the heat to low and simmer, stirring occasionally, for 10 to 12 minutes.
Cool apple filling. Remove the pan from the heat and let cool.

To use in pie: This recipe makes about 4 cups, which is enough for one standard 9-inch pie.For a classic sliced apple filling, cut the apples into even ¼-inch slices instead of dicing them. The cooking time may change, so cook just until fork-tender.Storage: Let the apple pie filling cool completely, then store it in an airtight container in the refrigerator for up to 1 week. Freeze it in a freezer-safe container or bag for up to 6 months. Thaw overnight in the refrigerator before using.
