These chocolate cake mix cookies are an easy 3-ingredient dessert! They bake up soft and fudgy in 20 minutes, with a white chocolate drizzle that makes them bakery quality.
Ingredients
1 (13.25-ounce) boxchocolate cake mix, I prefer Betty Crocker
½cupsalted butter, melted
2large eggs
Optional: 1/2 cup white chocolate for drizzle, semi-sweet chocolate chips
Instructions
Preheat and prepare: Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside.
Mix: In a large bowl, stir the cake mix, 1/2 cup melted butter, and 2 eggs until combined. If you have time, refrigerate the dough 15 to 20 minutes (it will make it a little easier to work with, since it is sticky).
Scoop and bake: Using a medium scoop or spoon, scoop the dough onto the baking sheet. Press a few chocolate chips on tops if desired. Bake 9 to 11 minutes, or until the cookies are set.
Cool: Let cool a couple minutes on the baking sheet and then transfer to a cooling rack.
Drizzle: Melt 1/2 cup white chocolate in the microwave on 50% power for 30 seconds. Stir and continue in 15 second increments until smooth and melted. Using a spoon, drizzle of the tops of the cookies.

I've tested many cake mixes and my favorite mix to use is Betty Crocker.Note the size, some cake mixes come in 15.25 oz size, which is fine to use. If the mixture seems dry, you can add a teaspoon more of melted butter or oil at a time until batter is thick and sticky.Variations: You can use pretty much any flavor of cake mix to make these cookies. Feel free to add in your favorite mix-ins or dip in chocolate. Storage: Store cooled cookies in an airtight container at room temperature for up to 1 week. To freeze, place in a freezer-safe bag or container for up to 3 months and thaw at room temperature. If drizzled, freeze in a single layer first so the chocolate sets before stacking.
