These high-protein cottage cheese egg bites are easy to make right in the blender and baked in muffin tins. Meal prep friendly and easy to customize with a variety of mix-ins!
Ingredients
10large eggs
¼ cupmilk or water
1cupchopped bell pepper
1cupchopped spinach
1cupcooked crumbled breakfast sausage, crumbled bacon or diced ham are good too
½cupdiced onion
1teaspoonsalt
½teaspoonpepper, plus more to taste
½cupcottage cheese
Optional Toppings: Salsa or hot saucem avocado, or chopped herbs
Instructions
Prepare: Preheat the oven to 350°F and spray muffin tin with non cook spray, or use a silicone muffin pan.
Whisk: In a large bowl, whisk 10 eggs with 1/4 cup milk. Add the bell pepper, spinach, sausage, onion, 1/2 cup cottage cheese, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir to combine.
Add to cups: Pour the eggs mixture evenly in each cup.
Bake: Bake for 20 - 25 minutes, until the center of the egg bite is puffed up and the center is slightly brown.
