Ingredients
1poundthree cheese tortellini
1pintgrape tomatoes, sliced
1bell pepper, chopped
1cucumber, chopped
¾cupsliced olives
¼cupsliced or chopped red onion
1cupchopped salami or pepperoni, about 1/4 lb
1 ¼cupsItalian dressing, I like using the Olive Garden brand, more if needed
Shredded parmesan cheese, optional
Chopped parsley, optional
Instructions
Cook tortellini according to package directions. Drain and run through cool water, until cooled.
Chop the tomatoes, bell pepper, cucumber and onion on a cutting board. Then combine them with the tortellini, olives and salami in a large bowl. Pour the dressing over the top and stir gently until evenly coated.
Store in the refrigerator until ready to serve. Top with shredded parmesan cheese and chopped parsley, before serving, if desired. Serve while chilled.
Notes
Chill before serving:I like to refrigerate the salad for about an hour before serving. To serve as a meal: This dish can also be served as a main dish. If served as a main dish, it will serve 4-6.Dressing: Check out my easy homemade Olive Garden salad dressing recipe. Substitutions: You can also use ziti or rotini noodles in place of the tortellini and add grilled chicken or pepperoni in place of the salami.
