Ingredients
¼cupwarm water
1Tablespooninstant yeast
2Tablespoonsgranulated sugar
1cupmilk
1tspsalt
3 ½cupsall-purpose flourmore or less
2cupsgrated cheese of your choice
2cupsdiced ham
Butter for brushing tops
Coarse saltoptional
For optional water bath:
3quartswater
4teaspoonsbaking soda
1Tablespoongranulated sugar
Instructions
Combine water, yeast, and sugar in a large mixing bowl. Let sit till bubbly, about 3-4 minutes. Add milk, salt, and enough flour to make a fairly stiff dough. Knead a few times on a floured counter top. Return to the bowl and let rest for 5-10 minutes.
Divide dough into 4 equal portions. Roll each portion out into a 12×4″ rectangle on a countertop sprayed with non-stick spray. Sprinkle 1/2 cup cheese and 1/2 cup ham down the center of each rectangle. Pull up the sides and pinch closed. Place seam side down on a cookie sheet lined with parchment paper. Let rise till doubled, 30-60 minutes.
Optional water bath: Bring 3 quarts water, soda, and sugar to a rolling bowl. Carefully drop one long roll into the boiling water. Boil 10 seconds and flip over. Boil 10 more seconds and carefully remove with two slotted spoons.
Cut each roll into one inch slices. Place on a well greased or lined cookie sheet. Bake at 400° for about 15 minutes or till golden brown. Brush hot pretzel bites with melted butter and sprinkle with coarse salt if desired.
