This cheeseburger soup is a thick, hearty and cheesy soup made with ground beef, carrots, celery and tender potatoes. It's classic cheeseburger taste is a family favorite!
Ingredients
½poundlean ground hamburger
2Tablespoonbutter
½cupchopped onion
1cupshredded carrots
1cupchopped celery
1teaspoonminced garlic
2Tablespoonsall-purpose flour
¾teaspoondried parsley
½teaspoonsalt, more to taste
¼teaspoonpepper, more to taste
32ounceschicken broth
2russet or yukon potatoes, peeled and cubed
2cupsshredded cheddar cheese
½cupsour cream, optional
Optional: crisp bacon crumbles, sliced green onions or scallions, for garnish
Instructions
Cook 1/2 pound hamburger in large skillet over medium heat. Once browned, drain grease and set meat in a bowl. I like to line the bowl with a paper towel to absorb any extra grease.
Add 2 Tablespoons butter, 1/2 cup chopped onions, 1 cup carrots and 1 cup celery to the pan. Allow to cook for 5 minutes. Then add 1 teaspoon garlic and sprinkle 2 Tablespoons flour over top. Cook an additional minute.
Add in 32 ounces chicken broth, 2 cubed potatoes, salt and pepper. Bring to a boil. Cover and simmer for 10 minutes, or until potatoes are fork tender.
Next add back in the meat and 2 cups cheese. Stir and allow to melt. Add in 1/2 cup sour cream if you'd like it a littler creamier. Salt and pepper to taste. Ladle into bowls and add extra cheese and green onions for garnish.
Notes
For a more creamier soup, stir in 1/4 - 1/2 cup sour cream or heavy cream after the soup has been cooked.
