This 5-ingredient summer treat is a cool twist on classic grasshopper pie made with an Oreo crust, mint chocolate chip ice cream and topped with silky chocolate ganache.
Spread Ice cream: Using a rubber spatula, spread softened ice cream over the oreo crust.
Make ganache topping: In a microwave safe bowl, warm up 1/4 cup heavy cream for 30 seconds in the microwave. Add 1/3 cup chocolate chips and whisk until incorporated. If you need to warm it up more, put back in the microwave for 10 more seconds and whisk again.
Spread ganache: Pour ganache over the top of the ice cream and spread to cover the top. Optionally, add some mint oreos to the top for decoration.
