Instructions
Prep. Preheat the oven to 425°F. Spray a baking sheet with nonstick spray.
Drizzle sweet potatoes with olive oil. Place the 3 cubed sweet potatoes on the baking sheet. Drizzle with 2-3 Tablespoons olive oil. Sprinkle with 3/4 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon chili powder.
Roast. Bake 30 minutes, tossing halfway through. Add more seasoning, if needed.
Notes
Sweeter version: Mix in 1 to 2 Tablespoons brown sugar and omit the chili powder.More seasoning: Add 1/2 teaspoon smoked paprika and 1/2 teaspoon garlic powder. Storage: Store in an airtight container in the refrigerator up to 5 days.
