These strawberry cake mix cookies are soft, chewy, and incredibly easy to make with just 3 ingredients. A pretty pink treat for parties, potlucks, or any sweet craving.
Ingredients
15.25ounce box strawberry cake mix
½scant cupvegetable oil, or 7 TB melted butter
2largeeggs
white chocolate melting wafers, optional
Heart sprinkles, optional
Instructions
Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside. Combine the cake mix, oil and eggs in a large bowl. Stir together until combined. If you have the time, refrigerate the dough for 15-20 minutes (it will make it a little easier to work with, since it is sticky).
Using a medium scoop or spoon, scoop the dough onto the prepared baking mat. Bake for 9-11 minutes, or until the cookies are set. You don’t want them to brown. Allow to cool on the pan for a couple minutes and then transfer to a cooling rack.
If desired, melt 1/2 cup chocolate and then dip half the cookie into the chocolate. Lay cookies onto a wax paper and add sprinkles if desired.
Notes
Cake mix size: This recipe was developed for a 15.25 oz box (Duncan Hines or Pillsbury). Betty Crocker is now 13.25 oz. If you're using the smaller box, reduce the oil to about 1/3 cup.Storage: Keep cooled cookies in an airtight container at room temperature for up to 1 week, or freeze in a freezer bag for up to 2 months.
