This irresistible chocolate lava cake recipe is a dessert lovers dream with a velvety exterior and gooey, molten center that oozes with dark chocolate.
Optional toppings: ice cream, powdered sugar, berries, or chocolate sauce
Instructions
Preheat oven to 400°F. Spray six 6-ounce custard cups or ramekins with non-stick cooking spray and then dust the inside of the cups generously with cocoa powder.
Add butter and chocolate chips to a small microwave-safe bowl and microwave for 45 seconds. Stir together, then continue microwaving in 30 second intervals (stirring each time) until the chocolate is melted and the mixture is smooth. Set aside.
In a large mixing bowl, combine the eggs, egg yolks, sugar, salt, and vanilla. Using a hand-held mixer, beat on medium speed until well combined.
Fold the chocolate mixture into your egg mixture. Add the flour and cocoa powder and stir until combined.
Divide the batter between the prepared custard cups or ramekins and place on a baking sheet.
Bake for 12-14 minutes or until the sides are set, but the center is still a little bit jiggly. Watch closely because you do not want to over-bake.
Allow to cool for 1 minute, then turn them out onto individual dessert plates. Serve immediately with your choice of topping!
Notes
Notes:
Try to use high-quality chocolate morsels, such as Ghirardelli or Guittard. Nestle dark chocolate morsels do work as well.
Make sure not to overbake. You want the center to appear a little jiggly as you take them out of the oven. This will leave you with the gooey lava center you are looking for!
