These oven baked chicken bites are easy to make and stay incredibly juicy. They are perfect for busy weeknights when you want a reliable, family friendly dinner that is ready in only 20 minutes!
Prepare: Preheat oven to 425°F. Spray a 9x13 baking dish with non-stick cooking spray.
Chop Chicken: Chop the chicken breasts into 1 inch cubes. Move to a medium sized mixing bowl.
Add seasonings and oil: Add 1 Tablespoon olive oil, 1 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon paprika, 1/2 teaspoon garlic powder, and 1 Teaspoon Italian seasoning. Toss to coat.
Bake: Transfer chicken to prepared baking dish. Place the 2 Tablespoons diced butter on top of the chicken and bake for 15-20 minutes, stirring halfway through.

Store: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
Freeze: These bites freeze beautifully for up to 1 month. Thaw them in the fridge overnight and reheat them in the oven or the microwave. The air fryer would be easy too.
