Juicy Chicken Bites in the Oven
Oven baked chicken bites are one of my most versatile dinner options that I keep on repeat. If your family already loves recipes like oven baked chicken breast or baked chicken tenders, these juicy chicken bites are another simple, picky eater friendly option.
They’re perfectly seasoned then baked in the oven with butter, which keeps them moist and flavorful. Dip them in sauce, add them to wraps, or use them in casseroles and rice bowls for an easy protein packed meal.

- Chicken breast: Boneless skinless chicken breasts, trimmed of any excess fat and cut into 1-inch pieces.
- Olive oil: Helps to give the chicken a nice brown exterior and give the cubes an even coat of seasoning.
- Seasoning: Salt, black pepper, paprika, garlic powder, Italian seasoning.
- Butter: Adding diced butter into the dish so it melts as the chicken bakes is a great way to give them buttery flavor. Garlic herb butter would be extra yummy!
How to Make Oven Baked Chicken Bites
Add the chicken cubes to a medium mixing bowl. Sprinkle with all the seasonings and toss to coat.


Transfer the bites into a prepared 9×13 baking dish, spreading chicken into a single layer so they’re not overlapping.


Top with pats of butter and bake the chicken bites for 15-20 minutes, stirring halfway. Serve garnished with fresh parsley and enjoy!

Recipe Tips
- Switch up the seasoning mix. Try onion powder, taco seasoning, ranch seasoning, Parmesan cheese, or your favorite seasoning blend.
- Use chicken thighs. Instead of boneless chicken breasts, cut chicken thighs into bite-sized pieces instead.
- Add some heat. Sprinkle in some cayenne pepper or red pepper flakes for a little spice.
- Coat them in a sauce. Once they’re out of the oven, you can toss them in a sauce like Buffalo sauce or BBQ sauce for saucy baked chicken bites.
- Do not overbake. Chicken bites in oven bake faster than whole breasts at high heat, so don’t overdo it! They’ll be rubbery otherwise.
Serving Suggestions
- Side dishes: Steamed vegetables or green beans, rice, or potato wedges.
- Dipping sauces: Homemade BBQ sauce, ketchup, honey mustard sauce, Buffalo sauce.
- Salads: Add some protein to a Greek salad or use these chicken pieces in a Cobb salad.

Ingredients
- 1 pound chicken breasts , boneless and skinless
- 1 Tablespoon olive oil
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon paprika
- ½ teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 Tablespoons butter , diced
- fresh chopped parsley , for garnish
Instructions
- Prepare: Preheat oven to 425°F. Spray a 9×13 baking dish with non-stick cooking spray.
- Chop Chicken: Chop the chicken breasts into 1 inch cubes. Move to a medium sized mixing bowl.
- Add seasonings and oil: Add 1 Tablespoon olive oil, 1 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon paprika, 1/2 teaspoon garlic powder, and 1 Teaspoon Italian seasoning. Toss to coat.
- Bake: Transfer chicken to prepared baking dish. Place the 2 Tablespoons diced butter on top of the chicken and bake for 15-20 minutes, stirring halfway through.

Notes
- Store: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
- Freeze: These bites freeze beautifully for up to 1 month. Thaw them in the fridge overnight and reheat them in the oven or the microwave. The air fryer would be easy too.

Easy and delicious! Left off the Italian seasoning and added a splash of teriyaki sauce a few minutes near the end of the cooking so we could drizzle the buttery teriyaki sauce over some hibachi rice. There are so many ways you could season this!
