This sheet pan sausage and veggies is loaded with flavor from vegetables, sausage and simple seasonings. It's healthy plus quick and easy made on one pan!
Ingredients
1poundbaby potatoes, washed and quartered
1head (3 cups)broccoli, washed and chopped
1-2bell peppers or green beans, washed and sliced
4sausage links, sliced (I prefer Aidells apple chicken sausage)
For serving (optional): Fresh parsley and parmesan
Instructions
Preheat the oven to 415°F. Line a pan with foil or spray with non-stick olive oil spray.
Combine the salt, garlic powder, Italian seasoning and pepper in a small bowl.
Place cut potatoes in the pan. Drizzle with 2 Tablespoons of the olive oil. Sprinkle half of the seasoning on top. Bake for 10-15 minutes while you prep the other vegetables since they take longer to cook.
Pull the pan from the oven and push potatoes to one side. Add chopped broccoli, sliced bell peppers or green beans and sliced sausage links to the other side. Drizzle 2-3 Tablespoons olive oil over the top and then sprinkle with remaining seasonings. Toss with a spatula, until evenly coated. I like to spray a coat of olive oil spray over the top to make sure everything is well coated.
Bake for 15-20 minutes, or until vegetables are fork-tender. I like to toss the vegetables halfway through. Top with parmesan and chopped parsley if desired.
Notes
You can use any vegetables that are in season. Some of our other favorites to add in are sweet potatoes, carrots, zucchini or squash, green beans, and brussels sprouts.
