This bruschetta chicken is made with tender seared chicken topped with a homemade bruschetta made with fresh tomatoes, basil, garlic, olive oil and balsamic vinegar.
Ingredients
2largeboneless, skinless chicken breasts, cut in half horizontally
Season chicken. Season 2 boneless, skinless chicken breasts with the 2 teaspoons Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Sear chicken. In a large skillet over medium-high heat, add 1 Tablespoon olive oil. Place the chicken into the pan. Cook 5 to 6 minutes per side, or until the center is cooked through.
Garnish. Top with bruschetta and parmesan cheese. Drizzle the balsamic glaze over the top.
Notes
Cheese: You can melt a slice of mozzarella directly on top of the chicken, or mix fresh mozzarella cubes in with the tomatoes. Grilling the meat: This dish also works with grilled chicken. Just season and cook on grill until cooked through, then add bruschetta on top.
