- 2 medium sweet potatoes , peeled and cubed
- 2 Tablespoons olive oil
- ¼ teaspoon cinnamon
- 1 pound ground beef , lean
- ½ cup onion , diced
- 2 Tablespoons taco seasoning , more to taste
- 1 teaspoon salt , divided
- 1 cup cottage cheese
- 1 avocado
- hot honey , to taste
Instructions
- Prepare: Preheat oven to 415°. (See notes for air fryer instructions)
- Bake sweet potatoes: Toss the sweet potatoes, 2 Tablespoons oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon cinnamon. Cook for 20-25 minutes, until crispy and tender. Stir potatoes halfway through.
- Cook hamburger meat: Meanwhile, heat a large skillet over medium heat. Add the ground beef, and onion and cook until browned, stirring occasionally breaking up any large pieces. Once browned, drain off any extra grease. Then add in 2 Tablespoons taco seasoning and 1/2 teaspoon salt. Season more to taste.
- Serve: Add sweet potatoes and ground beef to serving dishes. Top with cottage cheese, avocado and drizzle with hot honey.
