Easy Banana Bread with Cake Mix

If you’re craving banana bread but want the easiest shortcut, this cake mix banana bread is the hack. Using a boxed cake mix keeps it simple (just like my cookies from cake mix and fudgy cake mix brownies), and it all comes together in one bowl with no mixer.

The result is a loaf that’s moist, fluffy, and perfectly sweet with a tender crumb and lots of banana flavor.

Ingredients

  • Box cake mix: I made banana bread with yellow cake mix, but you can use funfetti or chocolate if you like. Just ensure it is a 15 ounce box (or 15.25 oz).
  • Ripe bananas: Ripe and spotty are best, you will need about 3 bananas.
  • Eggs: Two large eggs at room temperature so they mix evenly into the batter.
  • Melted butter: You can also use vegetable oil or canola oil.
  • Vanilla extract: I find this balances the sweet flavors.

How to Make Cake Mix Banana Bread

In a large mixing bowl, combine the mashed overripe bananas, eggs, melted butter or vegetable oil.

Stir in the yellow cake mix and semi-sweet chocolate chips.

Pour into prepared loaf pan coated with nonstick cooking spray or lined with parchment paper and bake at 350°F for 40-45 minutes, or until a toothpick comes out clean.

Cool the easy banana bread cake mix recipe in the pan for 10 minutes before removing to a wire cooling rack to cool completely. Slice and enjoy!

  • 15 ounce box of yellow cake mix
  • 1 ¼ cup ripe bananas , mashed (about 3 large brown bananas)
  • 2 large eggs
  • cup melted butter , or oil
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips , optional
  • ½ cup chopped nuts , optional

Instructions

  • Preheat your oven to 350°F. Grease and flour a 9×5-inch (or 8×4) loaf pan or line it with parchment paper.
  • In a large bowl, combine the mashed bananas, eggs, melted butter or oil. The mix in the cake mix and chocolate chips.
  • Pour the banana bread batter into the prepared loaf pan.
  • Bake for 40-45 minutes, or until a toothpick comes out clean. Baking times may vary, so start checking for doneness around 40 minutes and adjust accordingly. If it's browning too fast, place a piece of foil over the top.
  • Allow the banana bread to cool in the pan for about 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
  • Once the cake mix banana bread has cooled, slice it into 12 servings and enjoy!

Notes

Muffins: Line a muffin pan, fill 3/4 the way full and bake for 18 minutes or until a toothpick comes clean.
