No-Bake Ice Cream Sandwich Dessert

When the temps are warm, there is nothing my family loves more than taking a dip in the pool. After swimming, a slice of this ice cream sandwich cake is always the perfect finish.

This frozen dessert couldn’t be any easier to make as well, with only 4 ingredients and 10 minutes of prep. Even my teenagers have made it!

Whether you’re serving it at a birthday party or a cookout, it is always a crowd-pleaser. If you love my Oreo ice cream cake, ice cream cake recipe or sugar cookie ice cream sandwiches, this one belongs in your summer rotation.

Ingredient Notes

Cool Whip, ice cream sandwiches, Oreos, hot fudge and M&Ms on the counter for ice cream sandwich cake.

Find the full printable recipe with specific measurements below.

  • Ice cream sandwiches: You will need 24 ice cream sandwiches. I used the full-sized rectangular ones.
  • Oreos: Regular Oreos work just fine. Chop into pieces.
  • Hot fudge sauce: One jar, I warm mine up then let it cool slightly so it is easier to spread.
  • Whipped topping: Frozen whipped topping from the store or homemade Cool Whip.

How to Make Ice Cream Sandwich Cake

In the bottom of a 9×13″ baking dish spread 12 of the ice cream sandwiches, cut to fit as needed.

Spread 1/2 of the hot fudge sauce over the layer ice cream sandwiches then top with half of the thawed Cool Whip. Sprinkle with Oreo crumbs.

Assembled ice cream sandwich cake in a white pan.

Repeat layers of remaining ice cream sandwiches, chocolate sauce, Cool Whip, then Oreos. Top with sprinkles or mini M&M’s (my favorite!). Loosely cover and store in the freezer until firm about 1-3 hours.

Recipe Tips and Variations

  • Ice cream sandwich flavor: Traditional vanilla ice cream sandwiches, chocolate, Neapolitan or Oreo ice cream sandwiches all work great!
  • Round ice cream sandwich: If you use a round ice cream sandwich like Skinny Cow, you might need a few more in this ice cream sandwich dessert.
  • Oreo variations: Use your favorite from Golden Oreos to mint or chocolate. Try a seasonal variety for something different!
  • Sauce: Swap the hot fudge for caramel sauce or any ice cream syrup you like, including a drizzle of Magic Shell topping.
  • Favorite toppings: Sprinkles, crushed Oreo cookies, chocolate chip cookies, M&M’s, nuts – peanuts, pecans, walnuts, almonds or chopped candy bars.

Notes

Store covered tightly with plastic wrap or foil. Best within 1 week, but will keep for up to 1 month when stored toward the back of the freezer.
Smucker’s Hot Fudge or Hershey’s Hot Fudge Sauce both work great. You can also use homemade hot fudge. Warm the hot fudge sauce lightly if you are finding it hard to spread.
Use any flavor of ice cream sandwiches. If using round ice cream sandwiches, you will need up to 30 sandwiches.
Swap the cookies for a different cookie if desired. Top with nuts if you would like.
