Ice Cream Sandwich Cake

This ice cream cake recipe is one of my favorite desserts to make during the Summer…it’s easy, delicious and such a refreshing treat when the weather is warm. I’m a huge fan of anything chocolate and believe me when I say that this recipe is the perfect combination of chocolatey goodness. Whether it’s the hot fudge, crushed oreos or ice cream sandwiches, this recipe is made for all of you chocolate lovers out there! It’s one of my favorite go-to recipes to make during the Summer and is always a hit with family and friends. My kids especially love this oreo ice cream cake recipe!

I made this oreo ice cream cake for my hubby’s birthday and everyone loved it! It makes the perfect ice cream sandwich cake for a Summer birthday! And you can’t beat how easy it is to make. Summertime is so busy and our schedule gets pretty crazy, so having simple and quick dessert recipes is a must. What I love about this ice cream cake recipe is that it comes together in a matter of minutes and you literally cannot mess it up! All of the ingredients taste amazing together….it’s like they were meant to be. :)

Ice Cream Cake Recipe

This Oreo ice cream cake is so simple and takes only a few minutes! Just layer the ingredients, freeze and your ready to eat! It also saves great and is just as delicious the next day. Enjoy!

  1. Smash Oreo’s in a zip lock bag & spread on bottom of 9×13 pan. Drizzle butter on top & mix with a fork.
  2. Layer ice cream sandwiches on top and spread hot fudge in between.
  3. Spread cool whip (or homemade whipped cream) on top of ice cream sandwich cake and layer with extra Oreo crumbs.

Ingredients

  • 24 Oreos (2 rows)
  • 1/4 cup butter (melted)
  • 24 ice cream sandwiches (2 boxes)
  • 12.8 oz Hershey's hot fudge
  • 8 oz cool whip (slightly softened)
  • Oreo crumbs for topping

Instructions

  1. Crush Oreo's in a food processor or blender. Add melted butter and then press  on the bottom of a 9×13 pan. 

  2.  Layer the ice cream sandwiches on top of each other in the pan (into 2 layers), with a layer of hot fudge in the middle to hold them together. 

  3. Spread cool whip on top of ice cream sandwich cake and layer with extra Oreo crumbs. Store in the freezer until ready to serve. 

You can also use homemade whipped cream in place of the cool whip.

  3. I think this is the first comment I've made…can't quiet remember. But I have to say that I love your blog and this recipe will be made at my house, for sure! This looks so yummy and sounds too simple not to make. We love having little desserts around the house here and the kids almost expect some sort of dessert after dinner.

  21. Looks awesome just wondering if you’re making ahead of time do you top with cool whip right before serving?!? Can you refreeze it if it’s all not eaten? And does it need to thaw out at all before serving?  Sorry so many questions but thanks for your help 

    • The Cool Whip needs to be thawed to spread on top, but can be refrozen. Yes, you can re-freeze, but I would do it quickly after serving. No, it doesn’t need to be thawed before serving. Happy to help! :)
