Easy Roast Beef Sliders

When planning party appetizers, I love to include a variety of crowd-pleasing slider recipes! These roast beef sliders are the perfect addition to any gathering next to a platter of ham and cheese sliders, cheeseburger sliders, or pulled pork sliders.

They’re easy to make, perfectly portable, and always a hit! Soft Hawaiian rolls are stuffed with sliced roast beef and gooey cheese, then brushed with a seasoned butter sauce and baked until warm and golden. They’re equally as good for potlucks as they are for easy weeknight meals!

  • Hawaiian dinner rolls: I like these because they’re not only tasty (with a hint of sweetness) but they come connected, so they’re easy to work with.
  • Mayonnaise: For spreading on the bottom.
  • Roast beef slices: Freshly sliced deli roast beef is what I prefer over any packaged roast beef. I like to ask for 6 slices of thick roast beef.
  • Provolone: Again, fresh slices of cheese from the deli counter are the way to go.
  • For the butter sauce: Butter, Dijon mustard, Worcestershire sauce, onion powder, sesame seeds.
  • Consomme: Similar to au jus for dipping!

How to Make Roast Beef Sliders

Use a serrated knife to slice the sheet of Hawaiian rolls in half horizontally. Lay the bottom half down in a buttered 9×13 baking dish. Spread with mayo and layer with roast beef.

Add the sliced cheese on top and place the top sheet of rolls overtop the filling. Whisk the melted butter, Dijon, Worcestershire sauce, onion powder, and sesame seeds, and pour it over the tops of the rolls. Let it soak in for about 10 minutes.

Cover the dish with aluminum foil and bake in a preheated 350°F oven for 10-15 minutes, and then uncover to cook for another 2 minutes until the top buns turn golden brown. Serve with warm consommé for dipping!

Recipe Tips

  • Hawaiian rolls are recommended, but any slider buns will work.
  • If you have leftover homemade roast beef or steak, go ahead and use it.
  • The butter sauce not only adds extra flavor, but also helps to brown the tops.
  • To make ahead of time, assemble the sliders, cover with foil, and keep in the fridge overnight. Pour over sauce and bake just before serving.
  • They are technically “pull-apart” rolls, but to keep things nice and neat, and avoid filling falling out, you may want to cut them apart.

Ingredients 

  • 12 Hawaiian dinner rolls
  • 3 Tablespoons mayonnaise , or horse radish
  • 12 slices deli-style roast beef , or 6 slices of thicker roast beef
  • 6 slices provolone cheese
  • 4-6 Tablespoons butter , melted
  • ½ Tablespoon dijon mustard
  • ¼ teaspoon Worcestershire sauce
  • 1/2-1 teaspoon onion powder , or minced onions
  • 1 teaspoon sesame seeds
  • 10 ounces beef consomme (one can)

Instructions

  • Prep. Preheat oven to 350°F and butter a 9×13" baking dish. Slice 12 Hawaiian rolls in half horizontally using a large bread knife. Make sure to keep the rolls connected to each other while cutting. Once sliced, remove the top section and place on a cutting board. 
  • Assemble. Add bottom section to your baking dish. Spread 3 Tablespoons mayo onto the insides of both the bottom and top sections. Then place 12 slices of roast beef and 6 slices provolone cheese on each roll in the bottom section. Add top roll section back to baking dish and evenly match up.
  • Butter sauce. In a small bowl, whisk together 4-6 Tablespoons melted butter, 1/2 Tablespoon mustard, 1/4 teaspoons Worcestershire sauce, 1 teaspoon onion powder and 1 teaspoon sesame seeds. The more butter the gooier they will be. Pour evenly over all of the rolls. Let sit about 10 minutes for sauce to soak in. 
  • Cover sliders with foil and bake for 10-15 minutes. Uncover and cook an additional 2 minutes to brown the top of the rolls. Best served while warm. 
  • Warm Consomme in microwave or stovetop. Serve with sandwiches for dipping.

Notes

Another fun way to make these is to put the sesame sauce in the inside, wrap with foil and place on the grill until melted, about 5 minutes.
Storing: If you have leftover sliders, place in an airtight container and refrigerate for up to 4 days. Reheat in the microwave or even enjoy cold.
Freezing: After baking, let cool and wrap them individually foil. Freeze in an airtight zip top bag or container. Allow time to thaw before reheating.
