Sautéed zucchini is a very simple way to prepare one of the best side dishes. It’s a vegetable that pairs well with any main dish, whether it’s prepared as crispy fried zucchini, roasted zucchini and squash, or easy zucchini fritters!

This quick and easy recipe for zucchini is made with nothing but a little salt, pepper, and Italian seasoning, and a quick sauté to caramelized edges, perfect for when you need a light, healthy side dish during summer or beyond.

  • Zucchini: Wash and dry medium sized zucchini then cut them into quarters.
  • Olive oil: Helps the seasoning stick to the zucchini, and it helps to caramelize the outside.
  • Seasoning: Salt, pepper, and Italian seasoning. Very simple, but also flexible.
  • For serving: Freshly grated Parmesan and basil. Parmesan and zucchini are a fantastic pairing, and fresh basil adds extra fresh herby flavor.

How to Make Sauteed Zucchini

Heat olive oil in a large skillet. Once the oil is simmering, add the zucchini in a single layer.

Sprinkle with seasoning and let it cook for about 10 minutes, stirring occasionally. The edges will become golden and the centers just tender. Season to taste.

Variations

  • Swap the oil for butter to give it a different flavor.
  • Add fresh garlic, diced onion, and cherry tomatoes. Garlic powder also works for extra seasoning. Toss in red pepper flakes for heat.
  • A squirt of lemon juice at the end really livens it up!
  • Use your favorite fresh herbs. I love basil, but oregano, parsley, and thyme also work.

Recipe Tips

  • Make sure to dry your zucchini well. Any residual moisture can make them soggy (there’s already plenty of water in zucchini).
  • Large, overgrown zucchini are usually very watery and can turn mushy in the pan. Medium zucchini give you the best flavor and texture.
  • Cut the pieces to an even size so they cook evenly.
  • To get nice golden brown edges, make sure to add zucchini slices to a hot skillet.
  • Cook in batches if your skillet isn’t wide enough to hold all the zucchini without overcrowding.
  • Best served immediately. The longer they sit, the soggier they get.

  • 1–2 Tablespoons olive oil
  • 2 medium zucchini , quartered
  • ½ teaspoon Italian seasoning
  • ½ teaspoon Salt
  • Freshly ground black pepper , to taste

For serving: Freshly grated parmesan and basil

Instructions

  • Heat. In a large skillet over medium-high heat, warm 1–2 tablespoons olive oil until shimmering.
  • Add. Stir in the zucchini in a single layer.
  • Cook. Sprinkle the zucchini with Italian seasoning, salt, and pepper. Cook, stirring occasionally, until the edges are golden and the centers are just tender, about 10 minutes. Season to taste.
  • Serve. Transfer to a serving dish. Top with a generous sprinkle of grated Parmesan and scatter fresh basil over the top. Serve immediately.
