Pepperoni Bubble Pizza

Bubble pizza is a fun, shareable recipe perfect for game day or an easy weeknight meal. It’s a deconstructed pepperoni pizza made with biscuit dough, sauce, cheese, and pepperoni, baked until golden and bubbly.

Unlike pizza muffins that come in individual portions, this bubble pizza bake can be served as a pull-apart pizza bubble, or, if you prefer, a scoopable bubble pizza! Each piece is coated in classic pizza flavors, and just like my crescent roll pizza it disappears fast!

  • Refrigerated biscuit dough: Keep refrigerated until you’re ready to use it. Cut each biscuit disc into quarters.
  • Pizza sauce and Italian seasoning: Use your favorite jar of pizza sauce, or if you have time, use fresh, homemade pizza sauce. I also keep a blend of homemade Italian seasoning, which adds incredible flavor.
  • Mozzarella and Parmesan cheese: Freshly shredded cheese is always my recommendation, however pre-shredded cheese can be used in a pinch. We’re going for easy here!
  • Pepperoni: Cut these into quarters. Extra pepperoni lovers can reserve some for the top.

How to Make Bubble Pizza

Use a pair of kitchen scissors to cut each biscuit into 4 pieces. Then, in a medium mixing bowl, pour in the pizza sauce, sprinkle with Italian seasoning, and stir.

Toss in the biscuit pieces, mozzarella, and pepperoni. Stir until everything is evenly combined and the biscuits are nicely coated. Transfer the mixture to a prepared 9×9 baking dish.

Top the pizza bubble bread with the remaining mozzarella, Parmesan, and any extra pepperoni you kept aside. If you like fresh herbs, you can also add a sprinkle of basil or parsley.

Bake in a preheated 375°F oven for 20-25 minutes until the cheese is melted and bubbly, and the top golden brown. Enjoy!

Bubble Bread Pizza Tips

  • Cut the dough pieces evenly, so they all bake evenly.
  • Make sure to toss the pieces in the sauce to coat well. You don’t want to leave any pieces dry and without flavor.
  • Customize your bubble pizza with other toppings, but don’t overdo it. Keep it maximum of 3 toppings. Our favorites include mushrooms and green peppers.
  • Browning too quickly? Tent it with a piece of aluminum foil for the remainder of the bake time.
  • If you have a few extra minutes, it’s a good idea to let it rest for 5-10 minutes before serving to let the ingredients settle.

  • 1 can (16.3 ounces) refrigerated biscuit dough
  • 1 jar (8 ounces) pizza sauce
  • 1 teaspoon Italian seasoning
  • 2 cups mozzarella cheese , shredded
  • ¼ cup parmesan cheese , grated
  • ½ cup quartered pepperoni , plus more for top, if desired

Fresh basil or parsley, for topping

Instructions

  • Prepare and preheat: Grease a 9×9 square baking dish and preheat the oven to 375°F.
  • Cut biscuits: Using kitchen scissors, cut each biscuit into 4 pieces.
  • Mix ingredients: In a medium sized mixing bowl, add 1 jar pizza sauce and 1 teaspoon Italian seasoning. Stir. Add cut biscuits, 1 cup mozzarella and 1/2 cup quartered pepperoni. Stir until biscuits are well coated. Pour into prepared baking dish.
  • Top: Top with the rest of the mozzarella, 1/4 cup parmesan and additional pepperoni plus basil or parsley, if desired.
  • Bake: Bake for 20 – 25 minutes or until the cheese is melted, bubbling and browning.

Notes

All ovens bake a little differently and yours may need to bake a few minutes longer to ensure the center is not underdone.
If edge pieces start browning faster than the center, tent with foil until the center pieces are finished with baking. 
Storage: Save leftovers in an airtight container in the fridge for 3 days.
Freeze: Wrap any leftovers in plastic wrap and transfer them to a freezer bag or freezer-safe container. Keep frozen for up to 2 months.
Reheat: You can warm your leftovers in the oven to get them a bit crisp again, or in the microwave, if you don’t mind a softer bite.
