Cinnamon roll bites made from Rhodes dinner rolls are a shortcut to cinnamon rolls that tastes completely homemade! The frozen dough is partially thawed, cut into bite-sized pieces, then baked together in a pan with an ooey gooey filling and a vanilla glaze on top.

- You’ll also need: Brown sugar and cinnamon to coat the rolls and for the filling, which also requires salted butter (melted), vanilla extract, and heavy cream.
- The powdered sugar glaze specifically uses the powdered sugar, heavy cream, vanilla, and salt.
How to Make Cinnamon Roll Bites
Combine brown sugar and cinnamon in a zip-top bag. Add the dough pieces and gently shake to coat. Transfer pieces into the prepared 9×9 baking dish.


In a small mixing bowl, add melted butter, brown sugar, cinnamon, and vanilla. Stir to combine and drizzle that saucy goodness over the dough. Drizzle with cream overtop, adding more if you want an extra gooey bite.


Cover with plastic wrap and let rise for 30 minutes, and then bake in a preheated 350°F oven for 35 minutes until lightly golden and warmed through. Finish with a drizzle of sweet glaze and enjoy!

- Cut even pieces. To ensure they all bake evenly and stay soft and fluffy on the inside, ensure they’re all cut to a similar size.
- Tent if necessary. If you notice the tops are browning too quickly, tent with foil and finish baking.

- Top with nuts. Sprinkle chopped walnuts or pecans on top for some crunch.
- Swap the glaze. You could use cream cheese glaze or cinnamon roll frosting instead.

- 18 Rhodes rolls , thawed for 20 minutes, then cut into quarters
- ⅓ cup brown sugar
- 1 Tablespoon cinnamon
Filling
- 4 Tablespoons salted butter , melted
- ¼ cup brown sugar
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- ⅓ cup heavy cream , more if desired
Glaze
- 1 cup powdered sugar
- 3-4 Tablespoons heavy cream
- 1 teaspoon vanilla extract
- 1 pinch salt
Instructions
Rolls
- Preheat and prepare: Preheat oven to 350°F. Spray a 9×9 sqaure baking pan with nonstick cooking spray.
- Coat dough: Add 1/3 cup brown sugar and 1 Tablespoon cinnamon in ziptop bag and combine. Then add cut up roll dough. Gently shake until well coated. Pour into prepared baking pan.
Filling
- Make filling: In a small mixing bowl, add 4 Tablespoons melted butter, 1/4 cup brown sugar, 1/2 teaspoon cinnamon and 1 teaspoon vanilla. Stir until combined. Drizzle over the top of the dough.
- Let dough rise: Cover dough with a clean dish towel and allow to rise for 30 minutes.
- Drizzle cream: Drizzle 1/3 cup cream over the top of the dough. Add more if you'd like them more gooey.
- Bake: Bake rolls at 350°F for 35 minutes, or until lightly golden and cooked through.
Glaze
- Prepare glaze: In a small mixing bowl, mix together 1 cup powdered sugar, 3-4 Tablespoons cream, 1 teaspoon vanilla and a pinch of salt. Whisk until smooth. Drizzle over warm rolls and serve.

These are delicious and a great, easy alternative to homemade cinnamon rolls. I would like to double this recipe and use the entire package of 36 Rhodes rolls to serve more people. 18 rolls fit well in a 9×9 pan, how do you suggest doubling this recipe and what pan size would work best?
