Grasshopper Pie with Ice Cream
A summer ice cream dessert is the best way to beat the heat in my opinion! In this easy grasshopper pie recipe, my Oreo pie meets Oreo ice cream cake with lots of minty flavor.
It’s a no-bake dessert that is always a hit at potlucks and summer get-togethers with it’s cool, creamy texture and the perfect balance of chocolate and mint flavors.

- Oreo pie crust: You can use a store-bought crust to keep things simple, or make your own homemade Oreo crust with crushed Oreos and melted butter.
- Mint ice cream: Mint chocolate chip ice cream adds that classic grasshopper pie flavor with little bits of chocolate throughout.
- Chocolate chips and heavy cream: These two ingredients come together to make the silky ganache topping. Semi-sweet or dark chocolate chips can be used.
- Mint Oreos: Crumble, leave whole or halve a few Mint Oreo cookies to press on top before freezing. While optional it adds a fun decorative touch and extra minty crunch.
How to Make Grasshopper Pie
Scoop softened ice cream into the Oreo crust then use a rubber spatula or the back of a spoon to gently spread it into an even layer.
To make the ganache, warm cream in a microwave-safe bowl for 30 seconds then stir in the chocolate chips. Keep stirring until smooth and glossy.
Pour ganache over the ice cream layer and spread evenly. If using, press Mint Oreos gently into the top. Freeze for at least 2 hours before serving.
Recipe Tips
- Soften ice cream. Let it sit out for 10–15 minutes until spreadable but not melted. It’ll be easier to layer in the crust and will refreeze more smoothly in an even layer.
- Want to use Cool Whip? Spread a layer of Cool Whip over the ice cream before adding the ganache. It gives the pie a fluffier finish and adds a creamy contrast.
- Use hot fudge instead of ganache: Short on time? Warm up jarred hot fudge and let it cool slightly, then pour it over the pie in place of the homemade ganache.
- Customize your flavors: Try mint cookie, cookies and cream, or chocolate chip ice cream. Top with chopped Andes mints for extra minty flavor.
- Clean slicing tip: Dip a sharp knife in hot water, dry it off, and slice for neat, even pieces.

- 1 Oreo Pie Crust , homemade or purchased
- 1 pint mint ice cream , softened for about 10 – 15 minutes
- ⅓ cup chocolate chips
- ¼ cup heavy cream

Instructions
- Spread Ice cream: Using a rubber spatula, spread softened ice cream over the oreo crust.
- Make ganache topping: In a microwave safe bowl, warm up 1/4 cup heavy cream for 30 seconds in the microwave. Add 1/3 cup chocolate chips and whisk until incorporated. If you need to warm it up more, put back in the microwave for 10 more seconds and whisk again.
- Spread ganache: Pour ganache over the top of the ice cream and spread to cover the top. Optionally, add some mint oreos to the top for decoration.
- Freeze: Freeze for at least 2 hours.
