Rich and decadent rocky road fudge is an easy chocolate fudge recipe loaded with mini marshmallows and nuts. Every bite has an indulgent sweet, salty, crunchy and chewy taste.
This fudge is everything I love about rocky road candy but in a rich chocolate fudge! It’s perfect for the holiday treat tray along with eggnog fudge.

Substitutions and Variations
- Type of chocolate: I used semi-sweet chocolate chips, but milk chocolate chips can be used or a combination.
- Unsalted butter: If using unsalted butter remember to add a pinch of salt to cut the sweetness of the rich chocolate flavor.
- Nuts: You can use peanuts, almonds, pecans, walnuts, pistachio or macadamia nuts.
- Marshmallows: Regular mini-marshmallows are our favorite but any flavored marshmallow will work and add a fun flavor.
How to Make Rocky Road Fudge
In a large microwave-safe bowl, add chocolate chips, condensed milk, and butter. Microwave 1 minute at 50% power then stir and microwave another 30 seconds until chocolate has melted.
Quickly stir in vanilla, marshmallows and nuts. Pour into the parchment paper lined 8×8 baking dish and press down in an even layer. Press extra marshmallows or nuts on top if desired then refrigerate until set.
Slice into 4 squares. Then slice each square into 9 squares to create 36 squares of the creamy chocolate fudge.
Make Ahead and Freezing Instructions
Make ahead: This rocky road fudge is a great make-ahead dessert! Store it refrigerated in an airtight container for a few weeks. Place parchment paper or wax paper between the layers. Perfect for last minute holiday gifts or potlucks.
Freeze: Store this easy fudge recipe in the freezer up to two months. Thaw before serving. I love to keep a few different varieties of fudge on hand during the holiday season to package in boxes with ribbon for an instant handmade gift.

Ingredients
- 3 cups semi-sweet chocolate chips (can also use milk chocolate)
- 1 (14-ounce) can sweetened condensed milk
- ¼ cup salted butter , sliced
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows , plus more for top if desired
- ¾ cup chopped nuts , see notes
Instructions
- Line an 8×8-inch baking dish with parchment paper. Lightly butter and set aside.
- In a large microwave-safe bowl, add the chocolate chips, condensed milk, and butter. Microwave 1 minute at 50% power. Stir and microwave another 30 seconds or until the chocolate has melted. Be careful not to over cook or it will be come grainy.
- Quickly stir in vanilla, marshmallows and nuts. Pour into the baking dish and press down with a spatula or piece of parchment paper. Press extra marshmallows or nuts on top if desired. Refrigerate until set.
- Store in the refrigerator until ready to serve. Slice into 4 squares. Then slice each square into 9 squares to create 36 squares.
