Chocolate Chip Cookie Pie

Rich, gooey and over-the-top decadent chocolate chip cookie pie is so easy to make with only 3 ingredients! It’s a giant chocolate chip cookie baked in a crust and everyone will love it.

If you’re looking for a SUPER easy pie recipe to add to your Thanksgiving menu, this is it! There’s hardly any work required and it’s seriously so delicious.

Chocolate chip cookie pie is SO easy to make and is a family favorite! It’s the perfect pie for non-pie fans at the holiday dinner. Seriously, who can resist a chocolate chip cookie baked in a pie crust that is filled with caramel? Your sweet tooth will thank you.

I typically don’t make this recipe from scratch since I’m usually busy making the pumpkin pie and razzleberry pie. This is the PERFECT pie for beginners and your kids could even make it while you’re making the roasted turkey or dinner rolls.

Just 3 Ingredients

All you need is 3 simple ingredients: a store-bought pie ready made crust, store-bought cookie dough and a can of dulce de leche. It’s easier than Toll House pie!

  • Pie crust: Pick up a store bought pie crust to make things easier, or make this homemade pie crust if you have more time.
  • Cookie dough: I used a roll of Nestle chocolate chip cookie dough. If you want to make it from scratch you can use this chocolate chip cookie recipe.
  • Dulce De Leche: This is a caramelized milk aka caramel that comes in a can. I prefer the Nestle Le Lechara brand.

No dirty bowl. No measuring flour, granulated sugar, brown sugar, or other ingredients. No need to stir wet ingredients with dry ingredients. This pie is so simple to make and is one of my favorite delicious pie recipes for a reason.

  1. Spread half of the cookie dough over the bottom of the crust.
  2. Spread the dulce de leche over top of the dough.
  3. Form disks of dough and gently press over top of the caramel until it is covered.
  4. Bake for 35 to 40 minutes.

Baking Tips

  • No crust version. You can also make this recipe in a cast iron skillet without the pie crust (similar to a pizookie). Just press the dough into the skillet and bake until the edges are slightly golden.
  • Homemade crust: This all butter pie crust recipe really makes this pie special!
  • Decorations. Sometimes I like to add extra chocolate chips to the top to make it look prettier. I just added a border of chocolate chips and made a heart in the center. You could simply just place a few extra chocolate chips on top or get creative with your design.
  • Making ahead. This dessert can easily be made ahead of time. If you want to serve it warm, bake in the oven at 200°F for 3-5 minutes right before serving. You can also warm each piece in the microwave for 30 seconds to 1 minute.

Favorite Toppings

This dessert tastes amazing on it’s own, but it’s even more delicious paired with yummy toppings. My favorites are vanilla ice cream and hot fudge.

Of course! I like to serve it warm because I love it topped with ice cream and hot fudge, but enjoy it any way you like.

Do I have to use premade ingredients in this chocolate chip cookie pie recipe?

Not at all. Feel free to make your own homemade pie crust, chocolate chip cookie dough and caramel sauce.

A chocolate chip cookie baked in a pie crust that's filled with caramel. So easy to make and takes only 3 ingredients. Everyone will go crazy over this gooey cookie pie!

Ingredients 

  • 1 (30-ounce) package chocolate chip cookie dough (I used Nestle)
  • 1 9-inch pie shell , divided (no need to pre-bake)
  • ¼ cup dulce de leche (canned caramel)

Optional: Semi-sweet chocolate chips or milk chocolate chips (for decorating the top), Vanilla ice cream, Hot fudge, Caramel sauce

    Instructions

    • Preheat the oven to 325°F. 
    • Spread 1/2 cookie dough over the bottom of the pie crust. Top evenly with the dulce de leche over top of the dough. 
    • Spread enough dough to cover the dulce de leche. You don't need to use all of the cookie dough ( I only used about 3/4 of the package). Top with extra chocolate chips, if desired. 
    • Place on a baking sheet and bake 35 to 40 minutes, or until the top is crisp and the center is cooked. It's okay for the pie to be slightly gooey in the center. I prefer it that way. 
    • Remove from oven and let cool a few minutes on a wire rack. Serve warm with a scoop of vanilla ice cream and a drizzle of hot fudge or caramel, if desired.

    Variations:
