Simple Peanut Butter Overnight Oats Make Mornings Easier
If you’re looking for a healthy, make-ahead breakfast, these peanut butter overnight oats are my go-to. I ate a plain oatmeal bowl for years before discovering how easy it is to prep oats the night before, and now this creamy peanut butter version is the one I come back to most. It takes 5 minutes to stir together, and breakfast is waiting in the fridge when I wake up.
It’s based on my classic overnight oats, just with peanut butter stirred in. Some mornings I add a spoonful of Greek yogurt for extra protein, and my kids love theirs topped with sliced bananas and a few chocolate chips. It’s easy to make a few jars at once so everyone can customize their own.
Ingredient Notes

Base
- Almond milk (or milk of choice)
- Rolled oats (I use gluten-free, do not use quick oats or steel cut oats)
- Honey (or sweetener of choice, maple syrup for vegan)
- Peanut butter
Optional mix-in’s
- Chia seeds
- Chocolate chips
- Chocolate protein powder (a great way to increase protein)
- Collagen
Optional toppings
- Sliced bananas
- Greek yogurt (for additional protein)
- Berries
- Extra peanut butter or nut butter
- Extra chocolate chips

How to Make Peanut Butter Overnight Oats
This peanut butter overnight oats recipe is super easy to make, there is no cooking required! Just follow the simple steps below to get started.
- Mix ingredients together. Mix all of the ingredients together in a mason jar or small bowl. Do not cook the oats, add them dry (they will soak up the liquid overnight). Cover bowl with plastic wrap or close jar with a lid.
- Chill in fridge. For the best texture, let the oats soak at least 8 hours or overnight. In a rush, a quick 2 to 4 hour soak works too, the oats just won’t be quite as soft.
- Top and enjoy! The next morning, top with sliced bananas, peanut butter, honey and chocolate chips if desired. Serve cold or if cold oats aren’t your thing, warm them in the microwave in 30 second increments.

Meal Prep and Storage
One of my favorite things about these peanut butter oats are that they are great for meal prep. Overnight oats will stay fresh in the refrigerator for up to 1 week, although they taste best in the first 3 days.
Simply double or triple the recipe depending on how many days you’d like to enjoy them for breakfast. Then pour equal amounts of the base mixture into pyrex containers or mason jars and store in fridge.
When ready to enjoy, I like to mix in a splash of almond milk before adding the other toppings. Because the oats are in the fridge for longer, the extra splash of almond milk keeps the texture creamy and moist. Then add your favorite toppings and dig in!

- Place in the fridge overnight.
- Serve. The next morning, customize with sliced bananas or berries, peanut butter, honey and chocolate chips if desired. Serve cold.

This recipe is so delicious! I use Steel Cut Oats in mine. I sub in PB Fit for the peanut butter and add 1/2 scoop of protein powder as well as chia seeds and flax seed.
